Undergraduate students from the course “Food and Beverage Management” visited The Venetian Macau on 22 February and 8 March 2023, led by Prof. Jacey CHOE, Assistant Professor of the Department of Integrated Resort and Tourism Management at University of Macau. The “Food and Beverage Management” course is the core elective course of this major. Through classroom learning, students may acquire certain management abilities, and field trips can help them better grasp the unique functioning of integrated resorts in depth. During these two tours, the students visited the “North” and “Jiang Nan” restaurants of The Venetian Macau, and gained first-hand managerial experience of the restaurant’s operation area and back kitchens.
North restaurant is famous for its show kitchen in the heart of the restaurant, guests can watch experienced chefs from China’s northeast steam dumplings or pull and cut flying dagger noodles at breakneck speed right before their very eyes. And Jiang Nan by Jereme Leung showcases the authentic flavors of Shanghai, Jiangsu and Zhejiang – celebrating the very best of Jiangnan cuisine.
Staff at The Venetian Macao warmly welcomed the visiting teachers and students. During the visit, the students had access to the restaurant’s back kitchen section in addition to the daily operating area. The students observed the current staff and learned how to prepare in-suite dining, welcome pastry as well as Dim Sum and deliver them to guests. Students had a better awareness of the restaurant’s working environment, as well as a better understanding of the integrated resort industry, as a result of such a vivid educational experience. Moreover, the visit would not have been possible without the enthusiastic assistance of Ms. Mandy, Ms. Cookie, Ms. Nicky, Mr. Mao from the Human Resource Department, Chief Executive Chef You, and his team members.
