On October 25, 2024, FBA Seminar Series: “Why should we try upcycled food? Investigating the relative importance of upcycled food attributes in conjoint studies” by Prof. YooHee HWANG was hosted by Assistant Professor Faye Feier CHEN from the Department of Integrated Resorts and Tourism Management and delivered by Assistant Professor YooHee HWANG from the School of Hotel and Tourism Management of the Hong Kong Polytechnic University.
In the seminar, Assistant Professor YooHee HWANG pointed out that food waste is a concerning issue, and food upcycling is a feasible new approach to reducing food waste. She shared the research results of two latest joint experiments to identify a series of attributes that affect the purchase of upcycled foods (such as certified upcycled food labels, taste, price, nutritional information, etc.), and investigated the relative importance of certified upcycled food labels compared to other attributes. Meanwhile, Assistant Professor YooHee HWANG answered various questions regarding the research on upcycled foods, shared her personal opinions, and answered the questions of the teachers and students present during the Q&A.
